J. Kenji Lopez-Alt, author of food column The Food Lab (nominated for the James Beard Award) and a James Beard Award recipient for his book The Food Lab: Better Home Cooking Through Science (which was also named Cookbook of the Year in 2015!) has compiled a list of 28 sauces everyone should try. This list was first published in 2017 but has since been updated.
Here is what Lopez-Alt had to say:
Heat Level: Hot
Flavor: This sauce gets its bright gold color from cayenne peppers, mustard, and turmeric - it's definitely the most curry-forward of all the Caribbean-style hot sauces in this lineup. Uniquely, it contains cucumbers (along with onions, carrots, garlic, and habaneros), which have a welcome cooling effect in the face of all that heat. It hits you fast, but doesn't linger long. Try it on fried eggs.
