Cuban Black Bean Dip
Black beans are a fundamental part of the diet in the Spanish-speaking caribbean islands. This dip has a heavy Cuban influence.
Ingredients:
• -15 oz cooked black beans
• -1 garlic clove, chopped finely
• -1/4 cup sour cream or natural yogurt
• - 3 tbsp chopped fresh cilantro, plus 1 tbsp to garnish
• - a dash or 2 of Iguana Gold Pepper Sauce
• - a pinch of salt
Directions:
Drain the beans thoroughly and blend to a paste in a food processor with the other ingredients. Garnish with the coriander and serve with corn ships, mini toasts, or whatever...
