Curried Chickpeas n' Onions

A quick & tasty hot side dish that's packed with antioxidants, which the latest scientific research says boosts brain power... Iggy can sure use that!


• - 15 oz. can chickpeas (garbanzos), drained & rinsed
• - 1 medium yellow or Vidalia onion, chopped
• - 8 oz. can no-salt added tomato sauce
• - 1 tbsp. curry powder (style of your choice)
• - 1 tbsp. Pirate’s Blend Caribbean Condiment (or to taste)
• - 1 tsp. Iguana Red Cayenne Pepper Sauce (or to taste)


Fast way: in a medium non-metallic mixing bowl combine all ingredients. Microwave on high, covered for 7 minutes, or until onions are soft and translucent. Slow & Tastier Way: Saute onions in medium sauce pan on med-high in 1 tsp. olive oil, until just starting to soften (barely a minute).
