Guava can be found everywhere around the Caribbean but are cherished particularly in the Spanish islands, where guava is used in many forms, from juices to paste. Here we present our SweetSting Pineapple Guava Topping to make your life easier.
1. Preheat the oven to 350F. Cut off the top of a whole head of garlic, pour over the olive oil, wrap it in foil and roast for about 15-20 minutes, until soft.
2. Squeeze the cloves out of their skins and crush them in a saucepan. Add all other glaze ingredients (except parsley and coriander). Stir and bring to a simmer. Crush up fruit chunks from glaze topping too if you prefer.
3. Cool slightly before serving. Sprinkle on chopped herbs
