Shrimp Tacos with Mango & Habanero Sauce
Ingredients:
• - 2 1/2 lbs small shrimp peeled & deveined
• - 1 medium onion, coarsely chopped
• - 1 red bell pepper, coarsely chopped
• - 1 tbs garlic, minced
• - Small corn tortillas
• - BeeSting Mango-Passion and Iguana XXX Habanero Pepper Sauces
• - Shredded romaine lettuce
• - Shredded jack or mexican cheese
• - Fresh cilantro chopped
• - salt & olive oil
Directions:
Preheat a sauce pan in medium heat and saute garlic in olive oil for 30 seconds or so. Add onions & bell peppers, and cook for 4-6 minutes, or until translucent but still crunchy. Lightly oil & salt shrimp, grill over medium heat about 2 minutes on each side, until just cooked all the way thru (oil grill first if needed). Warm tortillas on countertop grill or microwave for a few seconds. Dress each tortilla with a layer of vegetables, shrimp, lettuce, cheese and cilantro. Then sprinkle to taste with both BeeSting Mango-Passion and Iguana XXX Habanero Pepper Sauces. Fold-up and serve as soon as possible with mucho cerveza bien fria!
